Inability to assign different product categories to variants for tax purposes

Is it correct that I can’t define a product category for a variant?
I need the categories so that the taxation in shopify works correctly (17% for adults and 3% for children clothing).
why not also add category to the variant
we have reduces vat in some countries, and for the same product non-reduces in others.
